So, did you eat your weight in turkey, potatoes, cookies and whatever else over the last few days? I admit, we had quite a lot to eat yesterday, between our main Christmas meal and my husband’s wedding soup later on. These days we have moved away from turkey, on the whole, for our Christmas meal (yesterday we had duck), but since I know many of you may have turkey leftovers, I thought this was perfect timing to share these turkey spinach crepes with sweet potato sauce.
I don’t know about you, but one of the things I love about Holiday meals is having lots of leftovers. Having put all that effort in to making a great big feast, it’s nice when it doesn’t just disappear and you can nibble on it over the coming days. There’s usually so much going on both on Thanksgiving and Christmas you don’t quite get to savor the meal. Leftovers remind you how tasty it all was, I like to think. The only thing is, unless there is a huge crowd, a turkey tends to overstay it’s welcome. They are nearly always SO big. There are only so many sandwiches you can have, which is where things like these turkey spinach crepes come in.
