I have another extra post for you this week to let you know that I am excited to be co-hosting another Sunday Supper this week alongside Shelby of Grumpy’s Honeybunch. Our theme for this week’s event is budget-friendly meals and I for one am really looking forward to looking through all the creative recipes everyone is going to be sharing. I am going to be sharing a recipe for gnocchi with fennel and pork that’s delicious, easy and definitely budget-friendly as well, so make sure you come back on Sunday to see the recipe along with links to all the others listed below.
We are lucky enough to not have to think about the budget too much when planning meals, but I know not everyone is as lucky and even for us, I like to mix a few more economical meals in with ones that are less so to balance things out (and keep us from having to worry too much in the future!). I’m sure as my boys and their appetites grow, the budget for food will grow too, so having some budget-friendly options that are still tasty is definitely something I want to build up.
There are certain meals that lend themselves to being more budget-friendly, such as hearty soups, pasta and rice dishes or cheaper cuts of meat. One of the tricks in my opinion is to add some great flavors to still make it feel special – some of my favorites that I have shared so far are a whole roast chicken (and I always make my own stock with the bones), butternut squash risotto, pasta carbonara and soups like this root vegetable and lentil soup.
Watching the budget doesn’t mean you have to lose out on flavor, in fact sometimes it can be better as you know you’ve made something great from not too much.
