These strawberry coconut popsicles are incredibly easy – just 3 ingredients, whizzed up in the blender. Healthy and vegan, they’re creamy smooth & delicious.
I sometimes feel bad mentioning that it has been hot here recently when I speak to family and friends back in the UK and it has been anything but. However sometimes it needs to be done. We have had a pretty long string of really hot days here recently and this little Scottish girl is not designed for the heat, especially when it’s humid as it has been a lot.
Typically, when we had my son’s birthday party this last weekend it was forecast to be a really hot day, so we were glad we’d decided to hold it in a park with water, and at a time before it hopefully got too crazily hot.
As my son was listing off things he wanted to eat at the party, when he mentioned popsicles (or ice lollies to the Brits), I definitely wasn’t going to argue – it was going to be a day when we needed them. I decided to make these strawberry coconut popsicles as they are healthy (given we were also going to be having cake, I didn’t want to go overboard on the sugar rush), as well as deliciously cooling with the smooth coconut and fruity flavor. It was a good decision; they were well enjoyed.
I’ve had some mini popsicle moulds for a while that are great with younger kids as they can actually eat them before they melt everywhere and are about the right amount to eat. I then bought some larger moulds this year as I can imagine needing them in the future plus I kind of wanted some myself. I know, use the kids as an excuse when the reality is you want them yourself (just like the waffle maker). Either way, I know I’ll get some use out of them, particularly when the results are as easy to make and tasty as these strawberry coconut popsicles.
Making popsicles is really very easy, it only takes a little bit of planning since you need to allow them to freeze, but there’s no mixing part way through or needing to check in with them as there is with ice cream. These strawberry coconut popsicles are particularly easy as you simply put everything in a blender, whizz it up, then pour it in to the moulds and freeze. Even better, there’s only three ingredients and they’re healthy.
Popsicles are something you can really play around with the ingredients and flavors to get something you like, and there’s no need to have them loaded with sugar, particularly if you use fruit in them as I have here. Another bonus is often just a small range of ingredients is best and they are quick to prepare.
For these strawberry coconut popsicles, I used culinary coconut milk as it’s good for not separating out into the thicker cream and thin more coconut water, but a regular can will be fine as well, just make sure it blends up properly.
Smooth and creamy, delicious fruit flavor and not too sweet, but sweet enough, these strawberry coconut popsicles are so refreshing on a hot day. Plus the fact they are so healthy, you don’t need to feel the slightest bit guilty about having one. You could even have one for breakfast!
Strawberry coconut popsicles (healthy & vegan!)
- 1 lb strawberries 450g, 1 regular box
- 16 oz coconut milk NB -can is 16oz, can sub 11oz carton culinary coconut milk, both fine
- 1 tbsp honey (or maple syrup for vegan version) - if the strawberries are not that sweet, add a little more
- Wash and remove stems from the strawberries then put all of the ingredients in a blender. Blend until smooth then pour into moulds. Place in freezer until frozen - usually at least 4hours, but overnight best.
