Thai red curry (perfect for leftovers)

It's easier than you might think to make your own curry paste from scratch, and even better, it's the perfect base to transform leftovers (though you can make this with fresh protein too).

Let’s get started!

Gather the ingredients


The spice paste ingredients are mainly very easy to find, like ginger, garlic, onion and dried spices.  Peel and chop those ingredients that need it.

Blend up the paste


It's as simple as putting everything in the food processor, then you are ready to cook your curry.

Start cooking


This doesn’t take long - cook the paste a few minutes, add the veggies then mix in the coconut milk. Add the cooked meat and cook a few minutes more.



This curry is great over rice but you could also serve it over noodles.

A deliciously flavorful meal, that's so easy to adapt, too.
