Inside out caramel apple muffins
These mini muffins are a tasty and relatively healthy way to use up some leftover candy.

Servings: 12 mini muffins
- 1/2 cup unsweetened apple sauce 120ml, I had chunky homemade but smooth is fine too
- 2 tbsp coconut oil melted then cooled
- 1 egg
- 2 tbsp brown sugar
- 1 cup wholewheat pastry flour 120ml
- 1 tsp baking powder
- 1 tsp cinnamon
- 12 rolos or similar chocolate-coated caramel
Preheat oven to 350F/175C and lightly oil a mini muffin tin.
Mix together the apple sauce, coconut oil, egg and brown sugar until well blended.
In a separate, medium-sized bowl mix together the flour, baking powder and cinnamon. Add the apple sauce mixture and mix until well combined but try not to overmix.
Put a spoonful of the mixture into the bottom of each muffin mould. Press a rolo into each one the spoon over a little more of the batter so that the rolos are covered. You might need to press them in again as they can pop up a little as the batter expands.
Bake for approx 15min until lightly brown and cooked through.
