Inside out caramel apple muffins

These mini muffins are a tasty and relatively healthy way to use up some leftover candy.

Ingredients

  • 1/2 cup unsweetened apple sauce 120ml, I had chunky homemade but smooth is fine too
  • 2 tbsp coconut oil melted then cooled
  • 1 egg
  • 2 tbsp brown sugar
  • 1 cup wholewheat pastry flour 120ml
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 12 rolos or similar chocolate-coated caramel

Instructions

  • Preheat oven to 350F/175C and lightly oil a mini muffin tin.
  • Mix together the apple sauce, coconut oil, egg and brown sugar until well blended.
  • In a separate, medium-sized bowl mix together the flour, baking powder and cinnamon. Add the apple sauce mixture and mix until well combined but try not to overmix.
  • Put a spoonful of the mixture into the bottom of each muffin mould. Press a rolo into each one the spoon over a little more of the batter so that the rolos are covered. You might need to press them in again as they can pop up a little as the batter expands.
  • Bake for approx 15min until lightly brown and cooked through.
