This raspberry salad dressing is easy to make and wonderfully bright in both color and flavor.
Servings: 4 approx
- ½ cup raspberries 75g
- 2 tablespoon virgin olive oil
- 1 tablespoon red wine vinegar
- ½ tablespoon honey
- ¼ teaspoon Dijon mustard
- 1 pinch salt
- 1 pinch pepper
Place everything in a food processor or blender and blend until smooth and well combined.
Store in a sealed container in the fridge until needed (will keep a good few days, if not longer).
