Blueberry barbecue sauce (for red, white and blue chicken skewers)

- ½ cup blueberries 80g
- ¼ cup apple cider vinegar 60ml
- ¼ teaspoon cayenne pepper
- ¼ teaspoon paprika
- ¼ teaspoon ground cumin
- ¼ teaspoon dried ginger
- ¼ teaspoon salt
- 1 clove garlic crushed
- ½ tablespoon molasses
For the skewers
- 0.75 lb chicken 340g - breast is easiest, cut into bite-sized chunks
- ½ red pepper
To make the sauce, put all of the ingredients (blueberries, vinegar, cayenne, paprika, cumin, ginger, salt, garlic and molasses) in a small pan and place over a medium heat. Bring to a boil, stirring regularly, and cook for around 12-15mins until the blueberries have popped and the sauce is thickening. Mash up any lumps (or blend when cool if you prefer really smooth).
Allow to cool and store in a covered dish/jar until needed - I'd suggest in the fridge unless you properly 'can' them as you would jam (ie putting in a sterilized jar when hot and allowing vacuum to seal).
To make the skewers, thread chunks of chicken and pepper on to skewers and cook on the grill/barbecue over a medium-high heat, turning every few minutes until cooked through - exact time will depend on size of chunks and heat of grill but around 10-15mins is a reasonable guess.
