Apple stuffing crusted pork chops

- 1 lb pork chops 450g, 2 chops (I used boneless but bone in would also work - if so you probably want a little more weight-wise)
- 1 tablespoon unsalted butter
For the stuffing crust
- ¼ onion finely diced
- ¼ apple coarsely grated
- ½ clove garlic finely chopped
- ½ teaspoon fresh sage finely chopped
- ⅓ teaspoon thyme fresh or dry
- ½ cup fresh breadcrumbs 33g
Preheat the oven to 400F/200C. Prepare the onion, apple, garlic and herbs for the stuffing crust, if not already prepared.
Pat the pork chops dry and warm half the butter in a small-medium skillet/frying pan (that's suitable for the oven) over a medium-high heat. Brown the pork chops just a minute on each side so they are sealed then remove from pan and set aside.
Add the rest of the butter to the pan, reduce the heat a little, and add the onion. Soften for a couple minutes then add the garlic. Cook a minute or two more, stirring now and then, then add the apple, sage and thyme. Stir and cook a minute. Add the breadcrumbs and stir well then remove from the heat.
Press the stuffing mixture on top of the two pork chops then put the chops back in the skillet. Bake in the oven for approximately 20 minutes until the pork chops are cooked through but not overcooked and the stuffing is gently crisp on top.
