1fl ozpassion fruit pulpfrom approx 1 - 2 passion fruit
1 ½fl oztequilawould suggest resposado or mezcal
¾fl oztriple sec
¾fl ozfresh lime juice
1tablespoonsimple syrupor orange-infused syrup, if you have it (see notes)
Instructions
Scoop the pulp from the passion fruit. Put it in a shaker with the rest of the ingredients and one or two cubes of ice and shake well. Strain into a glass, either as it is or with more ice. If you like, top with a few of the seeds that are relatively separated.
Notes
If you don't have fresh passion fruit, you can use bought passion fruit nectar - use around 1 - 1 ½ oz (30-45ml).I used leftover orange syrup from making Persian sweet rice, shirin polow, which adds that little extra orange flavor, but regular simple syrup is also good.
