Rainbow slaw

This bright slaw-style salad is a simple mix with a light vinaigrette-style dressing that goes well with a range of dishes.

Ingredients

  • ½ cup carrot (½ cup is 1 medium) coarsely grated
  • 1 ½ oz snow peas ( 1 ½oz is around ½ cup once thinly sliced)
  • 1 cup red cabbage shredded
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon lime juice
  • 2 tablespoon vegetable oil
  • 1 teaspoon sugar or honey

Instructions

  • Grate, slice and shred the vegetables as noted above - they should all end up similar sized pieces, ideally. Mix together the carrot, snow peas and red cabbage in a bowl.
  • In a small dish, mix together the vinegar, lime juice, oil and sugar until blended then pour over the vegetables and toss to coat them all.
  • Serve soon after making for best crispness (though you can also store in the fridge, the vegetables will however soften a little).
