1 ½ozsnow peas( 1 ½oz is around ½ cup once thinly sliced)
1cupred cabbageshredded
2tablespoonapple cider vinegar
1tablespoonlime juice
2tablespoonvegetable oil
1teaspoonsugaror honey
Instructions
Grate, slice and shred the vegetables as noted above - they should all end up similar sized pieces, ideally. Mix together the carrot, snow peas and red cabbage in a bowl.
In a small dish, mix together the vinegar, lime juice, oil and sugar until blended then pour over the vegetables and toss to coat them all.
Serve soon after making for best crispness (though you can also store in the fridge, the vegetables will however soften a little).
