Raspberry vinaigrette
This raspberry salad dressing is easy to make and wonderfully bright in both color and flavor.

red wine vinegar

Dijon mustard

Instructions
Place everything in a food processor or blender and blend until smooth and well combined.
Store in a sealed container in the fridge until needed (will keep a good few days, if not longer). If it starts to separate, stir well before using.
Notes
If you prefer a slightly thinner consistency, add a small amount of water or lemon juice after blending, re-blend and check the consistency again.
