Ingredients

  • 4 oz spaghetti or other pasta of your choice eg penne
  • 6 tablespoon romesco sauce or a little more, to taste
  • 2 tablespoon Manchego cheese (approx) can also use

Instructions

  • Cook your pasta until al dente (just tender) then drain.
  • Add the sauce to the warm pasta and, if you like, add any additions you may want eg cooked chicken, shrimp, diced chorizo or vegetables. If the sauce is too thick, you can add a little of the pasta cooking water or some olive oil to loosen it up.
  • Serve, topped with a sprinkling of Manchego cheese.
