Blend the strawberries with olive oil, balsamic vinegar, Dijon mustard and honey along with a pinch of salt and pepper until smooth - you can use a blender or small food processor but blender generally gets the mixture smoother. If needed, scrape down and re-blend.
Serve drizzled over simple greens or a salad with ingredients such as strawberries, avocado, chicken, cheese and/or nuts. You can make the dressing ahead of time, if you prefer, and store in the fridge for a day or two.
