Preheat the oven to 375F/190C.
In a small bowl, mix together the raisins, sugar, cinnamon, allspice and lemon juice so well combined.
Cut the butter into thirds and soften one third if it's not already spreadable (I put in the microwave for a couple seconds). Spread the softened butter on one side of each of the slices of bread. If it's not quite enough to give a thin layer over both slices, use a bit extra butter (but still keep the other two chunks for later).
Core the apples all the way through - if anything have a slightly larger opening at the top than bottom, but do core the whole way through. Check and make sure to remove any remaining core inside. Score around the middle of each apple, just cutting trough the skin but barely into the flesh.
Place the pieces of bread, butter side up, in a baking dish and put an apple on top of each slice. Divide the raisin mixture between the apples, filling the core, and pressing down a little as needed to create space for more. The filling should fill right to the top - if not mix up a little more and top up. Make sure you add all the liquid sugar/lemon mixture as it has lots of flavor.
Top each apple with the reserved chunks of butter then drizzle each with some honey. Bake for approximately 50 minutes, or a little more/less depending on your apple size and variety, until the apples are tender. Let cool slightly before serving.
