Winter Pimm's cup

This variation on the Pimm's cup theme is easy to make, light and tasty.

Ingredients

  • 2 oz Pimm's
  • 2 oz apple cider or cloudy apple juice
  • ½ oz lemon juice
  • ¼ oz ginger syrup
  • 2 dashes aromatic bitters optional but works well

To infuse/garnish

  • 1 slice orange
  • 1 cinnamon stick

Instructions

  • Place all of the ingredients, apart from the bitters, in a glass and stir to mix. Add the orange slice and cinnamon stick and swirl around then place the glass in the fridge to allow the flavors to infuse. Ideally, leave at least 30 minutes.
  • When ready to serve, either add ice to the glass or half-fill a separate rocks glass with ice then pour the cocktail over it. Add the bitters, mix in and serve. Leave the orange and cinnamon as garnish and if you like add additional garnishes such as an apple slice or two, some cranberries on a skewer.

Notes

If you want to make a larger batch, simply multiply up all the ingredients and mix in a pitcher/jug. You will probably not need quite as many cinnamon sticks but the drink ingredients can be increased equally for the number of glasses you want. Then divide between glasses to serve.
