½cupcooked beet½ cup is approx ½ medium beetroot, diced
1teaspoongingerpeeled and finely diced or grated, 1tsp is approx ½in/ 1cm peeled root
Instructions
Put the apple juice, chopped beets and finely chopped or grated ginger in a blender and blend on high for a minute or two until everything is well broken up and combined.
Best served immediately or you can also store in an airtight container in the fridge for up to two days, giving a shake to help recombine any settled-out solids before serving.

Notes
I recommend a fresh apple cider/cloudy apple juice, if available, for best apple flavor.Note - if your blender is not that strong, the juice may separate or be a little more coarse. If you prefer, strain it first before drinking.
