Instructions
Warm the first amount of olive oil in a small-medium pot/pan over a medium low heat then toast the couscous until lightly brown. It should take just a couple minutes. Reduce heat a little then add the water, cover and bring to a boil. Reduce the heat to simmer and cook until the water is absorbed, around 10 minutes - check towards the end, it should be very slightly chewy but not too soft or firm in the middle. If it seems too firm, add a splash more water.
While the couscous is cooking, dice the watermelon and nectarine (or peach) into relatively small bite-sized pieces. Chop or break up the feta into small chunks.
When the couscous has cooked, remove from heat and transfer the couscous to a bowl to help it cool more quickly, and for mixing with other ingredients. Add the lemon juice, olive oil and a few grinds of salt and pepper and toss so it is well-coated. Set it aside to cool as you chop the mint and parsley.
Once the couscous has cooled, add the chopped watermelon, nectarine, feta, herbs and blueberries. If you like, add a little extra olive oil and lemon juice. Gently toss everything together to mix then serve.
