Grilled peaches with mascarpone

Grilling brings out the flavor in the peaches and adds a slight grill flavor - paired with a simple maple-sweetened mascarpone it makes a delicious easy dessert.

Ingredients

  • 2 peaches relatively firm, only slightly softening
  • 3 tablespoon mascarpone
  • 1 teaspoon maple syrup
  • ½ tablespoon olive oil approximately, for brushing
  • a few mint leaves to garnish optional

Instructions

  • Heat up the grill over medium heat while you get things prepared. Split the peaches in half carefully along the 'seam' line, then carefully hold one half in each hand and twist the two halves to open them. Remove the stone. Brush with a little oil on the cut side, and, if you like, also on the skin.
  • Mix together the mascarpone and maple syrup and set aside until needed (being out the fridge will help it soften a little)
  • Grill the peaches cut side down for around 3 - 5 minutes over medium until you can see they are softening slightly around the side. You will see grill marks when you turn them. Turn and cook for another 3 minutes or so with the skin side down to soften a little more, though take care they don't get so soft you can't lift them intact.
  • Serve two halves per serving, each topped with a spoonful of the maple mascarpone and, optionally, garnished with mint.
