Raspberry collins cocktail

A fruity twist on the classic cocktail, Tom Collins - easy & refreshing.

Ingredients

  • 6 raspberries
  • 1 tablespoon simple syrup
  • 2 fl oz gin
  • 0.8 fl oz lemon juice
  • 2 fl oz soda water or club soda

Instructions

  • Muddle the raspberries and simple syrup in a cocktail shaker. Add the gin and lemon juice along with some ice and shake for a couple minutes.
  • Add a few ice cubes to a Collins (highball) glass and strain the gin mixture into the glass. I recommend not double straining and allowing a few bits of raspberry to go in to add to the flavor, but as you prefer.
  • Top the glass up with sparkling water/club soda and serve, garnished with a slice of lemon and a raspberry.

Notes

If you prefer, you can also make this in the glass by muddling the fruit and syrup in the glass, adding the gin and lemon juice along with ice, mixing through then topping up with soda water. This will give you more chunks of fruit, which means a little more raspberry flavor, but it doesn't blend quite as well. Some like the bits of fruit, others don't, so make as you prefer.
