Strawberry coconut popsicles (healthy & vegan!)

Super easy to make and perfect as a healthy, cooling treat.

Ingredients

  • 1 lb strawberries 450g, 1 regular box
  • 16 oz coconut milk NB -can is 16oz, can sub 11oz carton culinary coconut milk, both fine
  • 1 tablespoon honey (or maple syrup for vegan version) - if the strawberries are not that sweet, add a little more

Instructions

  • Wash and remove stems from the strawberries then put all of the ingredients in a blender. Blend until smooth then pour into moulds. Place in freezer until frozen - usually at least 4hours, but overnight best.
