Instructions
Put the watermelon cubes in a blender and blend until smooth. Strain through a fine strainer to remove seeds and coarse pulp - you should get around 2 cups (480ml) of watermelon juice.
Combine the strained watermelon juice, lemon juice, water and simple syrup and stir to mix. Adjust a little to taste as you feel needed, eg a little more simple syrup or water. Chill if not using immediately.
Gently stir before serving over ice, garnished with mint.

To make simple syrup, combine equal parts by volume sugar and water (so eg ½ cup/120ml water and ½ cup/100g sugar) in a small pan. Warm over a medium heat, stirring now and then, until the sugar has dissolved then remove from the heat, set aside and let it cool. Store in a jar or bottle in the fridge for up to a week or two and use as needed. We really like this made as watermelon mint lemonade by infusing the syrup with mint - simply add the leaves from around 3 stems of mint to the syrup once the sugar has dissolved and let it steep in the syrup as it cools. Then, strain as you transfer to a jar/bottle.
