Peaches and nectarines are a sign to me that you're properly in summer. At least when they are the kind that are wonderfully juicy and they give off that wonderfully aromatically fruity smell. At that point, it's hard not to go into a full on peach frenzy.
And though I love eating peaches just as they are, they are also good in many other things. True, some are more comforting, heavier desserts like cobbler, but they can also be light, like this peach lassi that's perfect for a hot day.

What is lassi?
Lassi is an Indian and Pakistani drink made with yogurt, and in fact "lassi" means yogurt mixed with water in Punjabi. It was developed as a way to beat the heat and is wonderfully refreshing. Most traditionally, it's made with buffalo milk yogurt but other types are common, too. You typically add some milk and either cold water or ice to really chill it down
The classic way to make it involves pouring the mixture from jug to jug to get air into it. These days, however, you can use a blender to mix it up really quickly, breaking down and combining the ingredient and getting that slight frothiness.
Fruit-based lassi is a common variation, though potentially more outside the country than in homes in India and Pakistan. Mango lassi is no doubt the most common, but you can find others using seasonal fruits. Plus, you can get that bit creative. I really like strawberry lassi and banana lassi and this is another one well worth a try.

As I say, I'm a little into peach and nectarines in the summer, and don't stop at just eating them as they are. There's my peach and pistachio tart, grilled nectarine arugula salad and grilled peaches with mascarpone to name a few.
This peach version of lassi is that little bit lighter and not quite as sweet as the more typical mango, but wonderfully fragrant and delicious. I added a little mint for an extra burst of summery freshness and it works really well with all the other flavors.
This is a really quick drink to make, just whizz everything up and serve, and while you might think it's something you just have with curry, it is really great anytime you feel like a nice refreshing drink. It's much lighter than a milkshake but has that same creaminess. It also has the fruitiness and lightness of a juice or agua fresca.
This peach lassi is so quick and easy to make, plus it's pretty good for you, too. So make any excuse to get the blender out and whizz one up soon.

Peach lassi
Ingredients
- 1 peach ripe
- ¾ cup plain yogurt
- ¼ cup milk
- 4 ice cubes approx
- 4 mint leaves
- 1 dash cardamom or cinnamon
- 1 teaspoon honey optional, or a little more/less to taste
Instructions
- Stone the peach and skin if your blender is not likely to break it up fully. I prefer to leave on if possible for color (plus it's easier). Cut the peach into chunks.
- Put the peach, yogurt, milk, ice cubes, mint leaves and cardamom/cinnamon in a blender and blend until well mixed and smooth. If you prefer a little sweeter, add honey to taste, blending it in.
- Serve immediately while nice and cold.
